SPONGE CUPCAKES
INGREDIENTS
● 3 eggs
● 150g sugar
● ½ cup sparkling apple juice
● 180g cake flour
● 1 tsp baking powder
● 1 cup chocolate chips or sprinkles

METHOD
● Preheat the oven to 180 degrees C.
● Whisk the eggs and sugar to achieve a light and fluffy consistency.
● Fold in the flour and baking powder into the egg and sugar mixture.
● Pour in the sparkling apple juice and mix well.
● Add the chocolate chips or sprinkles into the batter.
● Scoop the batter into cupcake moulds and bake for 25 minutes or until a skewer inserted into a cupcake comes out clean.
● Decorate with royal icing, fresh apple slices or sprinkles and serve warm.

APPLE CHICKEN
INGREDIENTS
● 6 chicken thighs
● 1 ¼ cups of sparkling apple juice
● Salt
● Pepper

METHOD
● Heat up a deep pan over the stove.
● When it is hot, add in the sparkling apple juice.
● When it reaches a slow boil, add in the chicken, salt and pepper.
● Simmer this in the sparkling apple juice for a few minutes.
● Then, close the lid of the pan and allow it to cook for 15 minutes.
● Turn over the chicken thighs and cook again with the lid partially closed.
● Open the lid entirely to allow any steam to escape.
● Slowly allow the juice to bubble slowly and thicken.
● Watch the chicken carefully to prevent overcooking or burning it.
● Cook for about 15-20 minutes until the juice has attained the thick consistency of honey.
● Remove from the heat and eat.
